Emission America UPAEP. Traditional foods. The roast and dessert Chajá.
Roast in many countries refers to the mode of cooking that includes a grill and fire, but in Uruguay, the term is most often used to refer to a cut of beef very popular in the country. Roast or roast strip is the rib of the cow cut crosswise.
Each roast strip is approximately five to ten centimeters wide, but it can vary and the customer usually asks at the butcher shop if he prefers thin or wide strips. The thickness of the bone of the ribs indicates the age of the cow, so that the meat is more tender it is better to buy roast with small and rounded bones. Uruguayans calculate half a kilo of roast strip per person, but they are good to eat and a little exaggerated, so you can buy a little less. It can be accompanied with some achura (Set of the viscera of a cattle or sheep that are eaten roasted, such as the liver, intestines or kidneys), the most typical of Uruguay are the chinchulín (braided and roasted sheep or beef intestines), the fat gut, the choto (Large intestine of braided beef with parts of lamb intestine that is consumed once it has been grilled; It is usually part of a barbecue of meat), the gizzards and the kidney. Sausages such as sausage and salty and sweet black pudding are also usually present on the Uruguayan grill.
Dessert chajá, the true Uruguayan. Chajá is a sponge cake moistened with syrup and filled with sweet of milk, meringues, whipped cream and peaches in pieces, decorated with cream, meringues in pieces, cherries and slices of peaches.
Emisión America UPAEP. Comidas tradicionales.
